Ingredients
3 ripe bananas
1 large egg
¼ cup maple syrup (or honey for a twist)
1 teaspoon vanilla extract
⅔ cup plain nonfat Greek yogurt (adds creaminess and protein)
1 cup oat flour (blend oats if needed—perfect for oatmeal banana bread)
½ cup vanilla protein powder
2 teaspoons baking powder
½ teaspoon cinnamon
¼ teaspoon salt
½ cup chocolate chips (optional for chocolate banana muffins or choco banana lovers)
Directions
- Prepare the pan
Preheat oven to 350°F (175°C). Line a muffin tray with paper liners. - Mash the bananas
In a large bowl, mash the bananas until smooth. Stir in the egg, syrup, vanilla, and Greek yogurt. - Mix dry ingredients
In another bowl, combine oat flour, protein powder, baking powder, cinnamon, and salt. - Combine wet + dry
Fold dry ingredients into the banana mixture gently. Stir in chocolate chips, nuts, or oats if using. - Bake
Divide batter evenly across 12 muffin cups. Bake 25–30 minutes, or until a toothpick inserted comes out clean. - Cool
Let muffins rest 5 minutes in the pan, then transfer to a cooling rack.
